We make pretty much all of our bread now - by hand. We don't have a bread maker. Love doing it. It tastes great and we know what's in it.

I am starting to make our bread myself. Rob can't eat anything but white bread because of his gout. I have managed to make white bread with oatmeal that he can eat and that tastes like darker bread. I do use a breadmaker though.

I understand :) Usually, the temperature here is too low for bread dough to rise, so that is what worries me. Not sure how to work around that. Guess the breadmaker is good enough for me :)
Paul Hollywood, an English bread guru, recommends a slow rise to develop flavour. If you haven't seen his bread book, I recommend it.

Sprite - put a bowl of hot to boiling water in the oven or microwave to warm it up. Let the bread rise in there, refresh (heat up) the water after a time, if necessary.

I've also seen the slow-rise overnight in the refrigerator recommendation in more than one book (it works), but I can't remember titles.
We sometimes use that method for our Challah.

i had a FM moment 2 days ago. i just fell into bed at about 3pm and slept until 5am the next day. other than that all is fine.

I think the baby is of normal size it is just the photo that is large lol. Google is good for how to do things. I use it a lot.
