not sure. Because I don't really know how it is supposed to look and feel in all stages yet. But I think, not enough risen, and not baked long enough. Something else: all recipes I have for the bread machine use sugar. But I don't see sugar in Hollywood's recipes. I thought the yeast needed sugar to feed on, but I guess not?

We make the his bloomer. Use room temperature water, not warm. Allow perhaps 2 hours to rise. We also find that the dough really spreads so we sort of tuck it under tight and reshape before it goes in the oven.

The main bread we make are Paul H's bloomer, a brown seeded loaf and challah. I can share the challah and the brown loaf. You have the white one!
