How are you? I've pecked away at thisgrid off & on this afternoon & evening; I'm making soups & broths from my turkey leftovers; & I seem to be here when no one else is today.
I just finished up. I will probably be making the turkey broth on Monday.
There must be something big going on tonight because it is pretty quiet in here.
it says that there are 87 people here; but I guess it's just the quiet ones, huh?
As far as the turkey broth; my son did 2 13lb. turkeys; 1 with a dry brine rub & one with a wet brine rub. He forget to rinse off the salt before cooking. I've been trying to dilute it down enough to get some of the salt out; he just got some potatoes; so that will help. The broth has amazing flavor (other than the saltiness); so I don't want to toss it out.
If I were a chef, I would probably have some ideas on how to overcome the salt. Alas, I am not.
I just break up the carcass, fill the pot with water, and simmer it for 4 to 6 hours with onions, carrots and celery.
Adding raw potatoes to a soup or broth will absorb salt. We ran out of potatoes, & my son said he'd pick them up; but I didn't know he was driving about 50-60 mkiles to a friends house before he brough the potatoes back! So this should help a lot.
Same here, wht. Only I also threw in garlic & ended up doubling the water (due to the salt content)

Yes, that's what I do too. And the potatoes have definitely taken care of the salt problem. Hubby *loves* kitchen gadgets, but the one we've used the most is the seal-a-meal; & I now have about 8 1 lb. pkgs of turkey pieces, & 4 12 oz. pkgs & 4 8 oz. pkgs of turkey pieces already frozen; & now I'm working on the turkey broth (I'll probably make up about 10 pints of that) then a couple pf pints of ready made soup. Then, on busy nights, pop the pint bags in a pot of boiling water & a lovely hot soup in minutes! :-)
