ori, when we were in arizona, there was a little box of spice paste on the shelf of a convenience store. i bought it, use it, love it, and wonder if it's common - do you know it? El Mexicano Achiote Rojo
I've used achiote paste before to marinate meat. I like it a lot. I'm not sure what brand I used.
i use it on chicken thighs (in the air fryer is amazing), and last night seasoned a fish dish with it (cod, onions, peppers, tomatoes, garlic - over rice with quesadillas)
how do you use it, welki?
i will put that on my list for the hispanic market.
bea, i make a marinade for the chicken, pop them in a zip loc and let them sit for as long as i can.
It has a nice flavor. Spicy but not too hot.

#1 ingredient is annatto seed
what i did last night, was mix a little of it with water (it's a clumpy paste, hard to stir into a saute) and added it to the vegetables after they'd softened up a little. then i added a little more :)

ori, i think it's pretty mild, but tasty, and gives a little orange color to whatever you're cooking. i think i'll try it when cooking rice, or maybe in some scrambled eggs

what happened was - i was planning on fish and chips, but neighbors stopped over and we ended up having some drinks (i learned how to make mojitos the other day - hahaha, i confused the two bottles of white stuff in the cabinet and made them with tequila - ole!) - by the time they left, it was too late to start frying fish, so into the saute pan everything went
so - drinks and a healthier dinner. (and they brought over home-made chocolate mousse) - win win!
I haven't had fish and chip in ages. Now I'm craving it :D
come on over, we'll go to costco and pick up more fish :)
(it's the only place nearby with good cod)

which air fryer do you have? i have an old t-fal (the paddle type) that makes the best potato chunks (can't really call them french fries) - and a gourmia that i use for the chicken thighs (the gourmia travels with us).
I don't have one. I've been thinking about getting one.
there are insta pots that do everything - i don't have one, but i think bea knows about them
took me a while to wrap my head around another gadget, and i was suspicious of technology replacing good ol' fashioned cooking, but for the things i use the air fryer for, it's worth it for me
I have an instapot that I haven't used in a long time. User error resulted in a serious burn to my wrist.

Fun (?) facts: pa8/60 means "slippers" in a number of languages, including Dutch, Afrikaans, and Czechoslovakian. It also occurs In French and Italian, with slight variations in spelling. And I still don't know where I came across it.
