I do like me some biscotti, especially with a glass of vin santo to dip it into...

cheese twists - you have to make the dough, regridgerate it for 2 hours, roll it out to 1/4" thickness, egg brush and coat both sides with a crumb/cheese/salt/paprika mix, cut into 1/3x6" strips, twist and place on cookie sheet, freeze for 1 hour to 1 day, then bake.

no - I've been making it for new years dinner for 45 years now! (and other special occasions). In this case everyone is chipping in to buy the meat, which is good because a filet now costs about $90 in our markets.

not really -- and most of mine can be prepared ahead of time. I use a sour cream pastry that can be frozen for up to 3 months. So it is really just par cooking the meat and wrapping it up the day of the dinner.

is it really as complicated as i hear, with the pastry having to be kept icy and the meat not, until bake time?
no -- I just chill the meat well before wrapping, then leave it in the fridge til bake time. You bake the fillet for 30 minutes at 400F and chill it before wrapping. I use Graham Kerr's recipe (the one with pate in it, not is new skinny minnie one). I'm sure it is on line somewhere and if you want my sour cream pastry recipe, I'll send it to you.
nan, you have shared the puff pasty recipe in your profile. i have seen recipes with mushrooms with the beef. recently the splendid table advised someone doing exactly what you are for a party
and had a lot of cautions about temperature of the pastry, would have to encase the meat in the eating place not ahead of time, and lots of things that made me say no way

hi ruru, we're ok, Frank's in pretty intense chemotherapy so we are at the cancer center at least twice a week (for tests and things as well as chemo)
