I found an old recipe for sopapilla cheesecake bars that I never tried, so I gave it a whirl. Wow, are they good.

It is really easy. Pressed out crescent dough on the bottom, cheesecake mixture in the middle and another layer of pressed out crescent dough for the top. Then butter and cinnamon sugar on top of that.

I do miss the simplicity of crescent roll dough. I don't think anyone has come out with a GF sub for that.
And now that they finally sell the crescent dough in sheets (for recipes) it is even easier.

I did have a recipe I found on Pinterest a few years ago that made a great GF version in my bread machine, but link doesn't work anymore. I wish I had printed it out.
