Spinach Balls
6 large eggs
12 tablespoons (1 1/2 sticks butter, melted
1 box (6 oz) chicken-flavored stuffing mix
2 packages (10 oz eac) frozen chopt spinach, thawed and drained well1 cup (4 oz) shredded Parmesan cheese
1/4 teaspoon freshly ground black pepper
1. Place eggs in large mixing bowl and beat with a whisk til they are lemon colored. Add the melted butter, stuffing mix, drained spinach, Parmesan and black pepper, and stir to combine. Using your hands, roll the spinach mixture into balls about 1 inch across. You will get about 46-48 balls. The mixture will be loose but not to worry, it will firm up in the oven.
when ready to bake preheat oven to 350 degree F.
Place the spinach balls on baking sheets and bake them til they are browned around the edges, 11 to 13 minutes for unfrozen balls. Transfer the spinach balls to a serving platter and serve warm. Enjoy.
