use an exacto knife. It will give you a smoother cut. Also. If you can temporarily baste the jacket to a piece of posterboard (card stock) it will stabilize it so it won't crinkle in the cutting. Rubber cement would work. Cut through the jacket and the board.

Sometimes heat can help in the process, Miy -- try in a spot in the center of the circle you are cutting out, to see if a heated cutting implement will help you out, the leather will melt rather than cut -- just watch out for the smell ;)
