I have been on too many sites of late where those in the room take gleeful delight in pouncing on the smallest error. it is good to be in here today instead.;)

back to the tater; i cook 10 taters or so. i quarter them, place them in 2 inches of broth, cut some onions up and herb and spice to taste and roast them for 2 hours. They store well for about a week in the fridge

I love cauliflower and brussels sprouts roasted. I like to use a little balsamic vinegar and parmesan cheese and a dab of butter (clarify the butter first unless you like the butter to really brown, which I do).
I haven't had much luck freezing potatoes. They always seem too mushy when defrosted. Must be the water content.
Russets have a high starch content, and do well when made ahead of time
