Loved CATS, too....took my kids to see it and the white cat came into the audience and laid her head on my 8-year-old daughter's lap....she never forgot that.

no longer than 8 minutes if they're spaced properly in the pan, because they'll be in there a couple of minutes longer while you scrounge around for an oven glove or a plate for service

i've tried lots of ways, but simplest is best. for us, two pounds is about right, more if you're really hungry...
wash, scrub, debeard them - let them soak in salted cold water. if aquaprime, no need to oatmeal or flour them while soaking
just before you're ready to eat - melt a couple of big tbl of butter and saute a little diced onion and garlic (or scallions if you like) - when they're softened, dump in the mussels and squeeze a lemon over everything (i use a huge saute pan), cover and let them steam away for 8 min (or until they're all open) - pour into whatever you're serving from, make sure you have a nice crusty bread on hand and it's off to the seahorse races
the broth is the cat's ass for dipping bread
(oh, any cover the pan while they're steaming - obvious to me, but maybe not to everyone)

i've managed to achieve a fair bit today. washing, ironing/folding/sorting, cleaned the canary cage, put up chrissy tree and decorated it with help from mother mac....all since lunch-time.
