i have a knife problem :) i have a set of wmf that i bought in macy's a million years ago and they're still great. then, my father in law left his knives to me, some very nice sabatier and henckels
so, even after culling the collection, i still have too many - but can't part with them
he also left his beautiful fillet knives to me - i need to buy more whole fish
I have a ton of knives too.. I won't toss them

i use them all, even the filet knives - the ones i gave away were meh knives that i'd collected over the years

i learned how to sharpen my knives from a butcher friend - got lazy last spring and ordered an electric sharpener, figuring that, if the knives last another 30 years, who cares. (same thing i did with my calphalon - 20+ years old and it's time they saw the inside of a dishwasher)
one of my grandchildren loves cooking, so i've started sending her a knife for each birthday/celebration. she loves getting them, and i let her (sort of) choose which one she should get next
sharper knives are much more safer than duller ones.. although you have to really pay attention to chopping and cutting

at this point, it's not likely we'll get on a plane and i really hate staying in hotels/motels, so this seems like the best way to avoid total cabin fever. i hemmed and hawed over the money, but shit, what the heck are we waiting for? until we're old enough to have our licenses taken away?
