Just found my moms old recipe (I know, it really belongs to Bisquick) - hand written in an old cookbook. I had forgotten about it.
So easy, yet soooo tasty.
Miracle Custard Pie
1/2 stick softened oleo
4 eggs
3/4 c white sugar
2 c milk, whole or 2%
2 tsp vanilla extract
1/2 c Bisquick (or flour)
pinch of salt
Put all ingredients into a blender. Blend for 30 seconds.
Pour into buttered 9 inch pie pan. Sprinkle with nutmeg. (can use pumpkin spice or cinnamon)
Bake at 350 degrees for 35 minutes. Let cool at least 30minutes. Refrigerate leftovers ( if there are any)
The flour will settle to make its own crust.
varieties - coconut - omit nutmeg, stir in 1/2 -3/4 cup coconut after blending.
Chocolate - add 1/4 cup cocoa to blender, omit nutmeg.
Pumpkin Custard Pie reduce to 2 eggs, 2T butter
omit milk, instead use 1 can of evaporated milk and 1 16oz can pumpkin add 1 to 1- 1/2 t pumpkin spice.

Pull-Apart Bacon Bread
1 lb. bacon, fried and crumbled, not too crispy
1 teaspoon oil
3/4 cup chopped pepper
3/4 cup onion, chopped ( not to be confused with ronions, inions or anions)
3 tubes biscuits -7-8 oz buttermilk
1/2 cup margarine, melted
1/2 cup shredded cheese
Saute peppers and onion in oil until tender. Cut biscuits into quarters and place in large mixing bowl. Add peppers-onion mixture, bacon, margarine and cheese, tossing until well combined. Pour into lightly greased 10" bundt pan. Bake at 350 degrees for 30 minutes.
SMores Bars
1 stick of butter, room temperature
1/4 cup brown sugar
1/2 cup sugar
2 king-sized Hershey milk chocolate bars
1 large egg
1 jar marshmallow creme/fluff
1 tsp vanilla extract
1 1/3 cups all purpose flour
3/4 cup graham cracker crumbs (7 full-sized graham cracker sheets, processed til fine)
1 tsp baking powder
1/4 tsp salt
Preheat the oven to 350 degrees. Grease an 8-inch square baking pan (I line my pan with foil for easy removal and cutting). Use a mixer to cream together butter and sugar until light and fluffy. Beat in egg and vanilla. Set aside.
Meanwhile,whisk together flour, graham cracker crumbs, baking powder and salt. Slowly add flour mixture to the creamed butter mixture until combined.
Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan.
Place chocolate bars over dough. 2 king-sized Hershey bars should fit side by side. (I had to trim a little off one bar to get mine to fit.)
Spread chocolate with marshmallow creme or fluff. PLace blobs of it on the chocolate and then spread it around.
Place remaining dough in a single layer on top of the fluff (I rolled the dough out between two pieces of waxed paper and use a spatula to place pieces of it on the top and pressed the pieces together).
Bake for 30 to 35 minutes (I did 37min. to get that nice brown color), until lightly browned. Be sure to cool completely before cutting into bars. (I only cooled for about an hour. You need the chocolate to be melty in a smore, right?)
Easy Smores Bars
1 pouch (1 lb 1.5 oz) sugar cookie mix
1 cup graham cracker crumbs
1 cup butter, melted
3 cups milk chocolate chips (18 oz)
4 1/2 cups miniature marshmallows
Heat oven to 375°F and line a 13×9 inch pan with foil.
In large bowl, stir the cookie mix and graham cracker crumbs together. Then stir in melted butter until soft dough forms.
Press the dough evenly into your foil lined 13×9 inch pan.
Bake for 18 to 20 minutes or until set, I made sure it passed the toothpick test. Immediately sprinkle chocolate chips over crust. Let stand for a few minutes until chocolate begins to melt. Spread the melted chocolate evenly over crust.
Sprinkle marshmallows over melted chocolate. Broil on the center rack of your oven until marshmallows are puffed and toasted to a golden brown. Watch closely because the marshmallows will brown quickly, it can take less than a minute. Cool a minimum of 10 minutes. Carefully remove from the pan using the foil. Cut into bars using a knife sprayed with non-stick cooking spray. They are best served warm but are still excellent at room temp. Store any remaining bars tightly covered. Makes 12-16 bars.
4,3,2,1 Brownies!!!
4T flour
3T water ( I use coffee)
2T oil
1 pack of your fav. hot cocoa mix ( about 4T)
Add a few chocolate chips, or whatever you like.
Mix dry ingredients in a large coffee mug, add the rest, nuke it for 1 minute That's it!!
Wow microwave cheesecake
2oz cream cheese, softened
2Tbs sour cream
2 or 3Tbs sugar
1/4 tsp corn starch or 1/2 tsp flour
1 egg, beaten
1/4 tsp vanilla
cream 1st 3 together until well blended, then whisk until nice and fluffy, add egg and vanilla mix well. Pour into an individual custard bowl. Microwave 30 sec. whisk smooth, microwave 60 sec. Let cool at least 5min. Even better chilled. I crumbled a graham cracker on top along with a sliced strawberry and a bit of whipped cream...absolutely wonderful
