Hurrah for Google: Copha is vegetable shortening made of solidified coconut oil. The product is used in cookies and other desserts. While infrequently used in the US it is quite popular in Australia.

peri, I've recently been in a curry craze, and have found out some interesting things... the term curry actually just means "stew" the british used it to try and describe the flavors found in indian foods. In India, there is no such thing as "curry powder" or "curry spice" but all different blends of cardamom, cumin, pepper, cilantro, coriander, and other spices... they will vary greatly depending on the region you are in too... neat huh?
