Father in law is 93 in home that is super ,class place ,the staff seem to really enjoy their work and care ,the place is really alive!! seems it would be a very fullfilling job

OK... that should be all the basics. Now you have all these bowls of stuff sitting around. Stir fry the chicken (ground, remember) or pork until well cooked. Splash with rice wine. Then add back to it all the other things, a couple of tablespoons of oyster sauce, around a tablespoon of sesame oil. These are the Vietnamese style ones.
Once everything is well mixed put it in a collander or similar over a big bowl and chill and drain simultaneously. If it isn't cold when you wrap the wrappers will deform.

You do not notice the opyster sauce in the finished product. But as I said this is MY recipe, so YOURS can be as you like. Try a tablespoon Superior Dark Soy instead if you like. You can add chilis or whatever at will. Chopped cashews are a good substitute for the water chesnuts if necessary.
