I make something called picadillo which is kind of like the filling without the bread - ground beef, lots of spices, peppers, onions, etc, in a tomato sauce -
we serve it over rice

Here's a recipe to try (not mine, btw, as it's not saved to my pc). ngredients For the filling 1 tbsp olive oil 1 onion, chopped 1 garlic clove, crushed 1 carrot, finely chopped 225g/8oz extra lean beef mince 1 tbsp tomato purée ¾ tsp ground cumin 1 tsp chilli powder 1 medium potato, peeled, cut into cubes 100ml/3½fl oz dark Mexican beer, brown ale or stout salt and freshly ground black pepper For the pastry 225g/8oz plain flour, plus extra for dusting ½ tsp turmeric ½ tsp chilli flakes 75g/3oz chilled butter, cut into cubes pinch salt 50ml/2fl oz milk 1 free-range egg yolk 1 free-range egg, beaten To serve sweet chilli dipping sauce Method 1. Heat the oil in a frying pan over a medium heat. Add the onion, garlic and carrot and fry until softened. 2. Add the mince and fry for 3-4 minutes, until golden-brown all over. 3. Add the tomato purée, cumin and chilli powder, stir well and cook for 3-4 minutes. 4. Add the potatoes and the beer and bring to the boil. Reduce the heat and simmer for 25 minutes, or until potatoes are cooked. 5. Remove from the heat and leave to cool. 6. For the pastry, place the flour, turmeric, chilli flakes, butter and salt into a food processor and pulse to a breadcrumb-like consistency. 7. Add the milk and egg yolk and pulse together until the mixture just comes together as a dough. 8. Turn the dough out onto a lightly floured work surface and knead for a few minutes, then wrap in cling film and transfer to the fridge to chill for an hour. 9. Preheat the oven to 200C/400F/Gas 6. 10. Roll the pastry out onto a lightly floured work surface and cut out 12 circles of 10cm/4in diameter. 11. Place a spoonful of the filling into the centre of each pastry circle. 12. Brush the edge of one half of each of the circles with some of the beaten egg, then fold over the other side and seal - make sure you don't trap any air inside. 13. Mark around the edges of the sealed pastry with the tines of a fork. 14. Place the empanadas onto a baking tray and transfer to the oven to cook for 10 minutes, or until the pastry is cooked and the filling is hot. 15. To serve, place the empanadas onto a large serving plate with sweet chilli dipping sauce in a bowl in the centre.

dcs - you reckon? I couldn't recognise some of the stuff ofered on planes, even after tasting it. However, same could be sa4 of part of the meal we were given on our dinner cruise in Amsterdam. We are still wondering, about 3 years on, what some of the stuff was.
I am always actually very annoyed when we counsel people about diet and then the hospital serves up bacon and eggs etc for breakfast... or in the Adventist case we serve Soya Bacon.

My daughter isn't a vegetarian because she thinks, 'I mustn't eat rhe cute little animals', she's never liked the taste or texture of meat, is now a recovered/ing anorectic who still craves some 'oomph' in her food. So she uses tofu (is allergic to soya) and lots of herbs, spices and sauces.

dcs - dunno! It's all still [art of her working out her food problems since she was 11. She's now 22, still alive after almost starving herself to the point of death, and is eating. That's all I care about! I listen to her, as she tries to find out why she has certain reactions to certain foods. I don't judge or comment.

Yes, red, they are. The 'recovered/ing' person still tries to find reasons not to eat any food they perceive too many calories or too much fat in. There's no sane logic in their reasoning, and, when they can still rattle off the calorie content of any meal you care to mention, you know they are still 'not cured'.

Red - I can understand that, but I bet she's not untypical. If you want to be alert to do your best for your patients, but your hours are long and you can hardly stay awake, and don't want to make mistakes, apart from protesting about your hours, what else could you do?
I think at times I am overly sensitive.
I do coffee... not drugs that could potentially cause me to make mistakes.
Maybe if you made a mistake or lost a patieny because you were so tired, you might go there? Not you, red, I'm just talking generally.
I've worked over the year with at least 4 impaired nurses, they always made errors, and were very difficult to work with.
well Jac, I suppose so, but nurses generally work only 36 hours a week these days. Mandatory overtime is not really the case anymore.
BUt from what I have heard the things she says are things I would love to say.

Jacula, I think one of the problems in Nursing is that she may be more typical than we think, and it bothers me a lot.

So, not too long from now, Stepdaughter has her first appointment to see if she is eligible for counselling after her ordeal with the paedophile her mother has chosen to stay with before her. Dumped her daughter in in either her own mother's care, her ex-hub's or my care. I don't think she was bothered which, or even if her daughter ended up in foster care. I was intending to stay out of the counselling stuff unless a session arose when I was needed. Going back to that place, where both my daughter and my dad were, for different reasons, is a double-edged sword for me and I'm not sure I'm ready to go back there. However, Other Half has requested my presence at the initiall interview.
I need to breathe deeply, not panic, forget the past and try to concentrate on the future.
