Flosey, I make a citrus cake similar to yours, but I simmer 1 pound of fruit (whole) covered with water for 2 hours. When cool, remove the seeds then puree the cooked pulp, rind, juice. Could use any citrus. I usually mix orange and lemon. So dense and tangy!

I also own all the instruments i mentioned.....I have a grand piano, a studio piano, a concert harp, a Troubadour harp, a Leprechan wire harp, a Venezulan triple stringed harp, an Yseult i5 stringed harp, a dulicimer, a hammerdulcimer, a violin, a classical guitar, bagpipes, soprano, spranino, alto recorders, ect., ect, an accordian, a buttonbox, ..... I do not believe in having an instrument unless it can be used, played and enjoyed.
you are definitely my daughter's idol... she wants to learn the harp in the worst way... I couldn't afford one, nor could I find a teacher of one!

tell her not to losse FAITH. I wanted to play the harp since I was 5 yrs. old. My Mom said I had to learn the piano first and then the cello and then the accordian. We didn't have hte money for a harp either. SO I learned it at college and purchased all my lesser(smaller) harps gradually. Didn't get my concert harp until it was 55 yrs. old!
still have 6 left...went out for the evening and not done yet! yikes!
